Characters:

Clear or a little light yellow liquid, insoluble in water but dispersible in hot water to form an acidic dispersion (PH2-3). Readily soluble in ethanol, acetone, fats, and other organic solvents.

Applications:

Delays starch retrogradation and extends the softness period of baked goods.

Enhances dough elasticity and extensibility, improves gas retention, increases volume, and creates a more uniform, fine crumb structure.

Prevents fat migration in oil-rich baked products, maintaining crisp texture.

In flavored milk, condensed milk, and light cream, prevents fat separation and protein sedimentation.

Improves dispersion of fat-soluble nutrients in pet canned food and aquatic feed.
